Whenever I see our great friend Bob head out on his early-morning fishing journey I stop all my dinner planning in the hope he'll come back with "the big one." He does come back empty handed on occasion, but I figure some positive thinking might help.
Sure enough on this day the fish gods were on his side, and I got a nice slab of white, beautiful striped bass handed to me end of day. All fileted and cleaned to boot.
It's super easy to prepare. Sliced lemon, herbs from the garden - sage and tarragon this time around - placed gently on top, salt, pepper, olive oil. Bake at 375 for about a half hour depending on the thickness of the cut and your palate. Honestly this was ridiculously great, and ridiculously simple. If you don't have a fisherperson as a friend, make one fast.
